Hillsborough, NJ – Opening November 2025 — Central Jersey is about to welcome a new culinary destination that promises to bring the flavors, warmth, and spirit of Greece to life. Rizes Greek Taverna, founded by renowned clarinet player Dimitri Manioudakis, is set to open its doors in early November, offering guests not just a meal, but an experience deeply rooted in Greek culture, cuisine, and community.
From Childhood Memories to a Lifelong Dream
“I’ve been working in restaurants full time since I was 15 years old,” Dimitri recalls. “As a kid, I remember helping my pappou fold napkins at the restaurant where he worked. From that moment, I felt a natural connection to hospitality.”
The name “Rizes” meaning roots in Greek, was a deliberate choice. “It’s one of my favorite Greek words,” he says. “It carries deep meaning, representing Greece’s culture and tradition.”
Rizes GreekTaverna aims to transport diners to a traditional Greek taverna, where the sound of laughter mixes with the aroma of grilled lamb and herbs.
“We want guests to feel like they’re in Greece, tasting authentic flavors in every bite,” Dimitri says. “Our goal is to prepare every dish the most authentic way possible, reflecting our deep ties to Greek heritage.”
A familiar name in the Greek community, Dimitri has spent years performing across the United States at Greek festivals, weddings, and cultural events.
“Through music, I’ve met incredible people in the hospitality world and discovered countless family recipes,” he explains. “Now I’m bringing everything I’ve learned to Rizes.”
Owning a restaurant has been a lifelong aspiration. While studying Business and Finance at Monmouth University, Dimitri made a decision that would shape his future.
“I told myself I wasn’t going to stop until I made it happen,” he says with a smile.
Guests can expect beloved classics like Grilled Lamb Chops, Lavraki, Moussaka, and Gemista, alongside weekend specialties such as Arni Kleftiko. The menu also features Cretan favorites, including Dakos and Kolokithokeftedes, in tribute to Dimitri’s roots.
“I wanted a menu that’s not too big, but just right,” he says. “That way, we can focus on freshness, quality, and attention to detail.”
At Rizes, every dish is made with meraki, doing something with soul, creativity, and love.
“Our employees are here because they love what they do,” Dimitri emphasizes. “That passion shows from the kitchen to the dining room and guests will taste it in every bite.”
While authenticity and quality are non-negotiable, Dimitri is equally committed to accessibility.
“We want people to walk out happy, full, and not feeling like they’ve overpaid,” he says. “We’d rather charge a little less and build loyal customers who come back again and again.”
A Cultural Hub for North Jersey
Located in Hillsborough, New Jersey, Rizes Greek Taverna is strategically placed about an hour from both New York and Philadelphia positioning it to become a destination restaurant for Greek cuisine lovers.
“We want people to travel here knowing they’ll find authentic Greek food and hospitality,” Dimitri says.
Beyond the menu, Dimitri envisions Rizes as a gathering place, warm, inviting, and full of philoxenia.
“When guests walk through our doors, we want them to feel welcome, like they’re part of the family.”
Live Music & Cultural Nights
With his musical background, Dimitri plans to host live performances and Greek cultural nights.
“Many musicians travel from Greece throughout the year, and I’d love to have them perform here,” he shares.
These evenings will blend music, food, and friendship, celebrating the Greek spirit that unites generations.
For Dimitri, Rizes is more than a restaurant, it’s a bridge between past and present.
“That’s what the word Rizes represents,” he says. “Bringing people together through culture and tradition.”
Grand Opening Celebration
Rizes Greek Taverna will open its doors in early November 2025, with a celebration filled with live music, authentic flavors, and the kind of philoxenia that makes every guest feel like family.
Looking ahead, Dimitri hopes to see Rizes become New Jersey’s premier Greek dining destination, with plans to expand into a Greek street food concept in the years to come.
“Rizes is an authentic Greek taverna where every dish tells a story of tradition, culture, and community,” Dimitri says. “We invite everyone to enjoy homemade flavors, warm hospitality, and a true BYOB experience.”
