A Leap of Faith and a Circle of Gratitude
Christos Zavolas’s journey began with nothing more than a dream. Originally from the Greek island of Karpathos, Christos was determined to open a taverna that would bring authentic Greek flavors to his community. Lacking capital but full of vision, he began his search for the right space.
Fate intervened when he met Gary Goodman, who introduced him to George Thomas. In a moment straight out of a film script, Thomas recognized Christos’s family name, that of his uncle, Nikos Kalafatis.
“This man was the best worker I ever had. And his father begged me to give him a chance to retire. I never forgot that,” Thomas said.
Without a contract or paperwork, Thomas handed Christos $60,000 to complete renovations and launch Ambeli. His only condition?
“If you succeed, you pay me back. If not, you have my wish.”
Ambeli opened its doors in November 2015, and from day one, success was undeniable. It was a circle of gratitude and generosity completed.

- Fresh fish is served only within two days of delivery.

Cranford’s Beloved Greek Host
Today, Ambeli welcomes a diverse mix of diners from every background. Though some were initially skeptical, Christos’s warmth and hospitality quickly won over the Cranford community.
An active member of the Greek Orthodox Church, Christos is a former dance teacher and singer and remains deeply connected to Greek-American cultural life. He sees his restaurant as a bridge between generations and cultures, a place where Greek heritage is celebrated daily.
Christos’s Message to the Next Generation
Christos doesn’t mince words when advising young people entering the culinary world:
“If you don’t love people, stay the hell away from culinary.”
And when asked about the role of Greek cuisine in America, he is just as passionate:
“Greek cuisine is one of the most important tools for preserving our identity. Even though they call it ‘Mediterranean,’ it is Greek. From Ikaria, Crete, Mani — we gave birth to it.”
